Ingredients
  • 1 kg of Veal  or Mutton Shanks
  •  2 cups Rice
  •  1 kg Yogurt
  •  300 gr. Arabic Bread
  •  100 gr. Pine seeds
  •  Black Pepper
  •  All Spice
  •  2-3 cloves Garlic
  •  Parsley
  •  1 Large Onion

 

 

 

Lebanese Meat Fatteh
Lebanese Meat Fatteh is a Lebanese main breakfast dish which can be made using chicken or ground beef. This dish goes back to early Lebanese history and is widely known around the Middle East. Garlic flavored yogurt is poured over boiled chickpeas and topped with fried bits of pita bread and toasted pine nuts. It can be served as part of an extensive Lebanese breakfast or as a side dish.

  1. Cook meat  with the cut onion, salt, pepper & spices until well done.
  2. Remove meat but preserve the gravy.
  3. Fry minced meat adding salt ,black pepper and spices.
  4. Fry pine seeds until slightly brown.
  5. Crush garlic cloves and mix well with the yogurt.
  6. Cook the rice as usual ( see rice recipe ).
  7. Chop the parsley and keep it aside.
  8. Cut bread into small squares and fry until brown.
  9. Place fried bread  at the bottom of the serving dish.
  10. Spread the rice on top.
  11. Add half a cup of the meat stock.
  12. Cover all with the Garlic Yogurt.
  13. Place Meat on top of Yogurt.
  14. Sprinkle the fried pine seeds and chopped parsley.
  15. Place the dish in a warm oven to warm the yogurt.
